Wheat bread with boiled cereals

What is neccessary to prepare

  • 600g of organic wholemeal bakery wheat flour
  • 150 g of ripe wheat or rye leaven
  • 400 g of quality water
  • 200 – 400 g of boiled cereals (rice, oat, millet, groats …, the amount does not matter much)
  • 10 g of coarsely ground caraway (it is possible to add a little fennel, coriander…)
  • 10 – 20 g of oil, e.g. olive oil
  • 3 – 6 g of sea salt

The procedure

First, we mix water with leaven, add wheat flour and then rye flour. Next, we add oil, salt, spices, seeds and knead it properly. Rye dough can tear while kneading so we make it more solid and help ourselves with a spatula. When everything is mixed up, we add boiled cereals. We knead the dough properly again and when it is finished, we make the bread surface smooth by moist hands. We can sprinkle it with seeds or caraway then. Next, we put a glass cover onto the bread and let it rise for 4 – 7 hours, with the temperature set at 27 - 28°C. We switch on the first baking phase: 15 min at 160 °C, and still 1 ½ hour at 130 – 140 °C afterwards. If we bake it this way, the bread is made properly and thanks to the glass cover, its crust is not too hard. You can adjust the temperatures according to the baking results.

What is neccessary to prepare

1 kg of fruit
500 g of sugar - better brown sugar
1 lemon
5 cloves
fresh cinnamon
1 tblspn of rum



  • 1 liter of milk
  • 3-4 tbsp of yogurt
  • sterilized jars

Home Tempeh (VIDEO RECIPE)

Preparing the soy beans:

  • use a bit more soy then needed 250g of tempeh = 150 g of soy
  • soak soy beans for 6 hours
  • After 6 hours:

  • remove any foam while boiling
  • cook the beans for 45 minutes
  • don´t overcook the beans
  • add the 1tbsp of vinegar
  • drain the soaking water
  • let the beans to dry
  • Preparing the tempeh:

  • add 0,5g of a tempeh starter
  • place and set the thermometer
  • moisten the ceramic plates
  • Put all on the Sana Bread maker
  • leave the lid slightly open
  • set the thermometer alarm to 33°C
  • Sana Smart Bread Maker - Program settings:

  • choose a ferment program
  • set time to maximum - 20 hours
  • set temperature to 32°C
  • Important steps after 15 hours:

  • lower the temperature to 28°C
  • If the thermometer alerts again lower the temperature to 26°C
  • Important steps after the removing from SBM:

  • stop the ferment by placing tempeh into a freezer
  • store in breathable material
  • Ingredients for "Tempeh Sandwich":

  • 50g of tempeh cheese
  • vegan mayonnaise
  • fresh tomatoes
  • iceberg salad
  • desired marinade
  • salt and pepper
  • Ingedients for vegan mayonnaise:

  • soy sauce
  • maple syrup
  • vegetable oil
  • mix all in equal parts
  • Ingredients for desired marinade:

  • 50 ml of soy milk
  • 100 ml of vegetable oil
  • apple cider vinegar
  • salt, pepper, seasoning
  • blend all together
